Crispy Parmesan Chicken

Ingredients:
  • 6 large pcs boneless chicken breasts
  • 1 packet McCormick BAG & Seasoning Chicken mix
  • 2 Tablespoons sugar (TT)
  • ¼ cup sunshine self rising flour
  • 1 cup breadcrumbs mixes in 2 tablespoon OLD BAY ® Seasoning
  • ½ cup parmesan cheese, grated
  • 2 large eggs, lightly beaten
  • 100g SCS butter (or Buttercup butter)
  • 2 cups cooking oil
Method:
  1. Butterfly cut chicken breast pieces. Place chicken between two sheets of heavy-duty plastic wrap and flatten using a meat mallet or rolling pin. Season with McCormick BAG & Seasoning Chicken premix and sugar to taste.
  2. Combine self rising flour, bread crumbs, old Bay seasonings and grated parmesan. Dip chicken in beaten egg; dredge in breadcrumb/flour & seasoning mixture.
  3. Melt butter in cooking oil in a large skillet; add chicken and brown each side thoroughly over medium-high heat until well done. Remove and drain excess oil. Serve & enjoy!
